Danny’s roasting, green buying, and tinkering mentor mentioned to him once, “Your green buying will change completely once you move onto the UG system.” At the time, Danny didn’t understand, but many green beans later, he started to.
We’ve said it before – a roaster operator is in tune when she can see and taste the final form of a coffee on a green evaluation table before it ever hits the walls of the production roaster. Bean foresight, some would call it.
From the moment we saw the belts on the UG turn, we’ve been creating flavor associations from our green purchasing evaluation tables and the coffees once they’ve been finally dialed in on our UG. With time, the patterns and our preferences started to align. It might only make sense to our BOTZ brain (like every description we write…beep), but we find it poetic and true. When the green says singular, the UG makes it plural. When the green shows a clean glimpse of flavor, the UG gives it a saturated stare. When the green comes pleasantly close, the UG takes it past the finish line. Look no further than David Ruben Gómez’s Gesha lot as an example.

-Deep tropical, raspberry jammy waviness, Pedro Garcia tropical forest thing (lime leaf meets black cherries), finishes resonate caramel/tropical mix (coconut water sweetness). Huge, plush, BOTZ.
