Drum roll please…sound Botzonia’s beepity booping trumpets! We are officially welcoming our first honey-processed coffee to the Botz roster.
For those of you unfamiliar with what “honey-processed” means, it’s when the coffee seed dries with some of the sticky fruit mucilage still attached when being processed.
Full disclaimer, I told myself long ago that I would probably never buy a honey-processed coffee because of all the honey’s I’ve sipped (a lot), I can only think of one that made me truly happy. Usually, they have me a bit process confused. It’s like a washed coffee and a natural coffee are battling in the cup, leaving a half-hearted version of both.
The one honey I freaked out on, however, gave me a truly unique window and tasting experience that helped me understand the potential of the honey processing method. With a razor-sharp washed acidity and peach flavor and slightly fermented berry finish, it felt like instead of fighting, a washed coffee and natural coffee had decided to shake hands mutually, a triumphant act of process diplomacy, which pleasantly shocked my taste buds.
This new Buncho Honey is a lovely representation of the honey-process done oh-so-right. It has a peach lemonade flavor and acidity that transitions into a syrupy body and a unique sweet floral finish, like pouring copious amounts of honey into a cup of chamomile tea. Coffees like this one definitely tickle your coffee neurons and make you wonder what flavors are possible due to processing. It’s pretty amazing what a little bit of sticky mucilage can do for your cup’s personality!
