Colombian caturra is one of BOTZ’s favorite varieties. If you’re familiar with the profile, it is one of the most electrifying in coffee. Jammy, ripe, bursty, and focused – how could it get any better? Blanca Riascos’s “proceso” – that’s how.
At BOTZ, we don’t have any processing biases, and we actually quite love it when the processing takes a variety to a dimension we’ve never experienced before. Truthfully, BOTZ is still decoding the exact “proceso” that occurred with this lot with our friends at Shared Source. In the meantime, we’ll explain the fruity magic we experience in the cup and all that makes this coffee so special.
Blanca Riascos’s caturra lot reminds us of a washed coffee with its fruity qualities amplified to a denser dimension. It leans heavily into purple fruits with a focus on sugary plums (perfect around this time of year) and a bubblegum-like perfumey finish. But what truly sets this coffee apart is its acidity. With all its sugariness and springy fruits, there’s a surge of tangerine acidity that cuts all the cup’s jammy qualities and compliments its flavors. Add in a dense and syrupy body and you have a truly endlessly drinkable coffee.
We may not know the exact details of Blanca Riascos’s “proceso”, but we undoubtedly trust that it created an elevated and masterful rendition of the caturra variety that we haven’t experienced before. We’re grateful to Blanca Riascos for this truly unique cup experience!
