Am I pink bourbon obsessed? Yes, yes I am. After purchasing another washed pink bourbon (Eliecer Artundaga’s coffee), I promised myself that I wouldn’t buy another one until next year. I felt like I had pink bourbon madness. Purchasing too many of them might lead to variety burnout. Then Semilla Coffee kindly introduced me to the magic Daniel Muñoz carefully curates and attentively monitors – pink bourbon to the next level, an anaerobic power-up.
I like to think of many anaerobic processes as a washed coffee’s flavor turned up to 10. You have all the inherent qualities of a stellar variety (floral, spiced, pink lemonade), and the anaerobic processing turns them into a rare coffee tasting experience.
For me, this coffee is like waiting for all of your strawberry dipping dots to slightly melt with a bit of hot fudge to boot. Take your spoon to swirl it once (just like you would after a pour-over to incorporate the different layers of extraction), and enjoy a decadent treat. You might even lick the bottom of your cup like you would your dipping dots bowl, to get that last ounce of strawberry-chocolate fondue goodness. Smell the aroma of the coffee once, and you’ll definitely realize no one will judge.
Coffees like this one always remind me to roast with absolute focus and determination. Daniel Muñoz produced one of the most intriguing coffees I’ve tasted, and I feel honored and obligated to roast it with the same passion and commitment he imbued in these beans. I can’t wait for you to taste it!
